Meet the Arkansas Black!
Kristy’s Barn had called to say they’d started picking my favorite apple, the Arkansas Black. Hard, tart, great for caramelizing as in Apple Tarte Tatin (declared a traditional dessert a couple years ago in the Frezon family).
After picking up a supply of Arkansas Blacks, I spent a good bunch o’time trying to make an angry moment via words and adding about 1500 words altogether to the NaNoWriMo story. All in all a good day.
Oh, that sounds delicious.
The tart tatin? It is – I make mine in a good-sized cast iron skillet because it’s heavy enough to do the caramelizing and go right in the oven. You can do the first part ahead of time, make it hot again and then proceed with the crust topping. I love caramel so…
